How can someone try out for one of these movies?

First of all, your best bet is to live in Hollywood, but you just might get lucky if in your town they have an open audition, or you get "discovered" by an acting scout.Otherwise, there's nothing you can do.

On the set of Hannibal I met a really nice lady that both her daughter and granddaughter made a living as paid extras. Best bet is to grab an agent/scout to do the work for you.

As Gwen pointed out, anything more than that depends on luck and who you know.

There are quite a few open auditions here (or there have been lately), and many casting call type things, but it all depends on where you live.
